Pancakes with Sredna Gora lukanka salami and mushrooms
Products for 4 portions

220 g Tandem lukanka salami
200 ml milk
1 onion
250 g mushrooms
125 g Tandem yellow cheese
A handful of green salad mix
2 tbsp. olive oil
30 g butter
1 tsp. dried oregano
Salt to taste
Pepper to taste
For the pancakes:
1 egg
300 ml milk
150 g flour
A pinch of salt
A pinch of pepper

Preparation

Method of preparation:
For the pancakes:
In a large bowl, beat the egg. Pour in 300 ml of milk and add the flour.
Stir the mix well, season and leave for about 20 minutes.

Heat a suitable pan and place ½ tsp. of olive oil. Pour the pancake mix and spread it on the bottom of the pan.
Cook for 2 minutes, flip and cook for another 1 minute.
Prepare the other pancakes in the same way. Keep warm until serving.

Cut the mushrooms into thin slices and set aside.
Heat the butter and olive oil in a pan and fry the mushrooms for 4-5 minutes. Add sliced onions and cook for another 2 minutes. Season with oregano, add flour and stir.
Pour in the remaining milk and cook for 4-5 minutes until the sauce thickens while stirring constantly.
Remove the pan from the heat and add 1/3 of the grated yellow cheese.
Cut the lukanka salami into thin wheels and set aside.
In each pancake, put 2-3 tablespoons of the mushroom mix, 3-4 wheels of salami, some yellow cheese and a few leaves of lettuce.
Fold in half and serve 2 pancakes per serving.
