Sausage with lentils and green salsa
Products for 4 portions

Ingredients:

• 350 g lentils
• 4 pieces of Tandem Macedonian sausage (about 400 g)
• 2 crushed, medium-sized cloves of garlic
• 1 bay leaf
• 5 tbsp. extra-virgin olive oil
• 4 tbsp. green salsa for serving
• 2 full tbsp. chopped parsley
• 1 full tbsp. fresh thyme

Preparation

1. Heat the oven to 190°C.
2. Boil the lentils together with the bay leaf and garlic.
3. Meanwhile, arrange the sausages in a small baking tray, and make diagonal cuts on each of them in advance. Bake in the oven for about 15-20 minutes until toasted.
4. Strain the cooked lentils, remove the bay leaf and add the remaining olive oil, green salsa, parsley, thyme and other spices.
5. Arrange the baked sausages on the lentils and serve the dish with some green salsa as condiment.
